Favourite Vegetarian Recipes
This recipe is from my first vegetarian cook book - the Cranks Recipe Book, 1986. Now yellowed with age and falling apart, I still use the book for old favourites like this one.
This takes only minutes to prepare, and uses up those ends of yesterday's baguette that you can't bear to waste.
1 small onion
125g breadcrumbs
125g grated cheese, eg. cheddar or cantal
2 eggs
1 tsp French mustard
425 ml milk
¼ tsp each of salt and pepper and grated nutmeg
chopped parsley to garnish.
Express Cheese Pudding
1. Peel and roughly chop the onion.
2. Put all the ingredients together in a liquidizer and blend.
3. Pour the mixture into a buttered shallow baking dish and bake in the oven at 200 C (or 180C fan oven) for about 45 minutes until set and golden brown.
4. Sprinkle with chopped parsley and serve with a home-made tomato sauce or ratatouille.
