Cheesy Bread Pudding
Sliced bread of your choice, e.g. focaccia
15ml red pesto sauce
150g cheese of your choice, e.g. cheddar
2 large tomatoes, sliced,
or 1 small onion very thinly sliced
3 large eggs
1 tsp chopped oregano
50g grated pecorino or parmesan cheese
salt & pepper.
It may be called Pudding, but it's a savoury version that's simple, quick and very very tasty. The inside is soft and savoury and the top goes crisp. Serve with baked beans.
1. Preheat oven to 180C. Mix butter & pesto and spread onto bread slices, making sandwiches with the cheese and tomato/onion. Cut sandwiches into triangles.
2. Stand the quarter-sandwiches point upwards in a large flat baking dish.
3. Beat the milk, eggs, and oregano, season well with salt & pepper and pour over the bread. Leave to stand for at least 5 minutes to soak in.
4. Sprinkle over the grated pecorino or parmesan and bake for 40 minutes or until golden brown and just set. Sprinkle with more oregano leaves and serve hot.
