Glamorgan Sausages
150g fresh breadcrumbs
175g Emmental or cheddar cheese, grated
50g onion, chopped
half a tsp grated nutmeg
1 tsp salt
half a tsp ground black pepper
1 tsp chopped sage (or tarragon or parsley)
2 eggs, lightly beaten
oil for frying
1. Mix all the ingredients in a large bowl with a fork.
2. With wet hands, shape handfuls of the mixture into the desired shape, then chill them for 5 minutes in the fridge. At this stage you can freeze them, interleaved with nonstick baking paper, then later cook them from frozen.
3. Heat the oil in a shallow pan and fry sausages for about 8 minutes, turning them until golden on all sides. Drain on kitchen paper and serve.
This recipe can be made into sausage-shapes or flat round burgers, or spherical no-meatballs. They can be fried and served with potatoes in any form, in tomato sauce with spaghetti, or oven-baked in ramekins and served as part of a roast dinner.
