Cheese & Garlic Pâté
1 shallot or medium red onion
1 clove of garlic
100g gruyère or cheddar cheese, finely grated
180g ricotta (or in France, Madame Loik)
2 tsp chopped fresh tarragon or parsley
1. Finely chop the onion or shallot, crush the garlic and mix in a bowl with the grated gruyère and ricotta.
2. Season with freshly ground pepper only (the cheeses are salty enough), then add the tarragon.
3. Mix well with a fork, tip into a dish, cover and refrigerate. The pâté will improve if left for a day for the flavours to develop and the uncooked onion and garlic to soften.
This makes a brilliant make-ahead starter, served with thin and crispy toast. It always goes down well.
